The Cattlemen Cleaver 2.0 was born out of our quest to create the ultimate culinary toolkit. Designed with the discerning chef in mind, this isn’t just a knife — it’s a testament to Montana Knife Company’s dedication to craftsmanship and utility. With its formidable size and thickness, the Cattlemen Cleaver is designed to master the rigorous demands of culinary excellence, effortlessly transitioning from carving thick meats and breaking down tendons and bone to making quick work of chopping hearty vegetables.

Despite its beefy appearance, we made some slight changes to the Cattlemen Cleaver 2.0 to make it that much better. We slightly reduced the thickness of the blade and also added the signature back-sloping heel that all MKC culinary knives share to give you extra finger room and grip comfort.

The handle is still sculpted for comfort and ergonomic sing the same handle shape and construction as our Chef’s Knives, it really is a tool you’ll want to use every day. A balance of power and control is at the heart of its design — robust enough to tackle heavy-duty tasks without compromising the ability to maneuver with precision.

The Cattlemen Cleaver 2.0's blade isn’t just about power; it’s about precision. 

With the Cattlemen Cleaver 2.0 we reduced the blade width slightly and added the signature backsloping heel for better grip and comfort. The blade also has a gentle rocker shape, to facilitate an intuitive and effortless rocking motion during use.

This feature is particularly beneficial when slicing or dicing, enabling the chef to work with speed and accuracy. It’s a design that respects the art of cooking, making each cut not just efficient but enjoyable.
Ideal Weight Balance

Achieving the perfect weight balance, the Cattlemen Cleaver 2.0 tips the scales at a deliberate 11.89 oz even lighter than its predecessor. 

Its design includes a skeletonized tang, a technique borrowed from our hunting knives for reducing weight without sacrificing strength. This strategic removal of weight from the handle shifts the balance forward, empowering chefs with a blade that feels like an extension of their hand, perfect for precision tasks in the kitchen.

G10 Handle Scales

The G10 handle scales on the Cattlemen Cleaver 2.0 are engineered for resilience and grip. 

This high-pressure fiberglass laminate — a material celebrated for its durability, moisture resistance, and stability — ensures a secure and comfortable grip, even in the busiest of kitchen environments.     Unexpected Go To

    Bought this knife for the kitchen, it has become my go to blade. From meat to veggies and everything in between. It’s weighted perfectly. There are no hot spots with the grip. It fits perfectly into the hand and presents the perfect weight strength balance.
