Bacon-Stuffed Burgers on the Pellet Grill

Bacon on a burger is good. Bacon stuffed inside a burger is better. These bacon-stuffed burgers fold crispy, seasoned bacon right into the meat before it hits a screaming-hot cast iron pan on the pellet grill.
The concept is simple, but the payoff is serious. Every bite delivers smoky, seasoned bacon flavor from the inside out. Top that with a bacon grease sear on the outside, and you’ve got one of the best stuffed burger recipes for your next cookout.

Ingredients
Great stuffed burger recipes start with quality ingredients and a short list:
- 1 lb. ground beef (80/20 blend works best)
- 4 strips thick-cut bacon, chopped into small pieces with a sharp, clean kitchen knife
- 2 Tbsp. your favorite carnivore seasoning blend
- Salt and pepper to taste
For serving:
- Your preferred burger buns
- Cheese of choice
- Lettuce, tomato, onion
- Pickles
- Your go-to burger sauce
Directions
Follow these steps, and you’ll have perfectly seasoned, juicy stuffed burgers in under 30 minutes.
Fire up your pellet grill to 450°F. Set a cast iron pan on the grill grate to preheat.
- Use a sharp kitchen knife to chop bacon strips into small, even pieces. Toss them into the hot cast iron and cook for five to seven minutes until crispy. Season the bacon with a shake of carnivore seasoning as it renders.
Pull the cooked bacon from the pan, but leave the seasoned grease right where it is.
- Transfer the bacon to a large bowl. Add the ground beef and another coating of carnivore seasoning. Mix by hand until the bacon is distributed evenly through the meat. Don’t overwork it; you want these bacon-stuffed burgers to stay tender.
Form four patties and press a slight dimple into the center of each one. This keeps them from puffing up into baseballs on the grill.
Place the bacon-stuffed burgers into the cast iron pan with the reserved bacon grease. Cook for about five minutes per side, letting the grease coat each patty as it sears.
Use a meat thermometer to check the internal temperature. Pull at 135°F for medium or 145°F for medium-well.
Let the stuffed burgers rest three to five minutes before serving. This keeps the juices locked inside instead of running out onto your plate.
