Every knife in our culinary lineup does the same job: get raw food ready to cook.

The MKC Carving Knife picks up where they leave off. When the turkey comes out of the oven, the brisket slides off the smoker, or the ham finishes resting, this is the blade you reach for to carve, slice, and plate.

The Gap Between Prep and the Plate

From boning to breaking to chopping, our culinary blades cover raw food prep. Knife owners have been reaching for their breaking and boning knives to carve roasts and slice birds, and those blades can manage. We built them for raw meat, not the presentation.

The Carving Knife fills that gap. It pairs the first trailing point blade we’ve designed in-house with the same handle you know from our Culinary Collection. The blade runs thinner, longer, and stiffer than our breaking and boning knives, purpose-built for bigger cuts of cooked meat coming off the grill, the smoker, and the oven.

A Surgical Tip That Gets Under the Meat

A carving knife works differently than a chef knife. You’re over the protein instead of on a cutting board. You glide through a turkey, a ham, or a bison leg, cleanly slicing pieces for serving.

The trailing point blade ends in a surgical tip that slips under the meat and peels it away from the bone. The long, thin profile covers bigger cuts. The knife may run big for smaller birds, but for the turkey, roast, ham, or wild game in that middle range, this is the blade you want.

Clean, Straight Slices Without the Flex

Our breaking and boning knives carry flex for precise cuts in raw meat. A carving knife has the opposite job: one long, clean, straight cut through cooked protein.

The Carving Knife’s blade runs stiffer on purpose. It holds its line instead of bending mid-cut, so the slices come off even.

That rigidity carries over beyond the protein. Pineapple, watermelon, and spaghetti squash all call for a blade that holds its line through a hard cut.

An Edge That Lasts the Whole Carving Session

MagnaCut stainless steel delivers the right blend of toughness, edge retention, and corrosion resistance. As a cryogenically heat-treated stainless steel, it won’t dull out halfway through carving a holiday bird. Even novice knife owners can resharpen it.

We coat the blade in a black PVD finish for added scratch resistance.

Fits Right Into Your Culinary Block

The Carving Knife uses the same large culinary G10 handle as our three-piece set. We kept it identical on purpose: add it to the set, and it’ll look cohesive and stylish on your kitchen counter.

The contoured G10 carries zero hotspots through a long carving session and keeps its grip when your hands are slicked with food. The Carving Knife slides into your culinary block as a natural extension of the collection.

Our butcher knives use handles shaped for reverse-grip raw meat work. The Carving Knife keeps you in a standard grip, making careful, controlled cuts for a finished meal.

From the Kitchen Counter to Hunting Camp

Each Carving Knife comes with a custom MKC Kydex sheath featuring a built-in retention screw to adjust blade tension.

The sheath protects the edge in the drawer, packs safe for travel, and rides along when the carving happens at hunting camp instead of the kitchen counter.

Final Thoughts on the Carving Knife

The Carving Knife fills a spot that’s been empty since we started building culinary knives: the space between the last step of cooking and the first plate on the table.

If you’ve ever carved a Thanksgiving turkey with a boning knife or sliced a Christmas ham with a blade that flexed more than it cut, you’ll understand why we built this one.
