The feel of this blade in hand, the edge and blade geometry, and fit and finish are all world class.
My only issue with this and other knives in the MKC culinary realm are that they are Cerakoted despite using a resilient steel like Magnacut. Cerakote is not approved as a food safe coating and the safety data sheets for most colors list it as containing some carcinogenic compounds to some degree. Of course these carcinogenic properties are likely in its pre-applied state before it has been cured, but I do not value a knife more than my own health.
With some care, you can maintain the coating pretty well, but it is highly unlikely that the coating will remain in a “food safe” (undisturbed/unchipped) state after decades of use. The knife itself will outlast the functional capability of the Cerakote almost certainly. Another reason to offer it uncoated.
If these, along with the rest of the culinary line were offered in uncoated Magnacut, they would be the absolute best knives on the market in terms of quality and availability of after sale service through MKC’s amazing generations program. Fingers crossed.
